Fresh Tomato Sauce 

This was the easiest tomato sauce I have ever made! It was delicious, and no hassle as I didn't peel the tomatoes. :) I did simmer the sauce for many hours. However, you could reduce cook time before blending!

Dosha Considerations - Best for Vata and Kapha; Reduce or avoid for Pittas or during the summer months.

Prep Time: 20 minutes
Cook Time: 4 hours

ingredients

  • 4 tomatoes
  • Purified water
  • Olive oil
  • Dried basil and oregano
  • Salt
  • Pepper

directions

  1.  Remove stems and dice tomatoes. Place in pot with enough water to cover tomatoes. Add in a generous pour of olive oil. Add a dash of basil and a dash of oregano. Season with salt and pepper.
  2. Put on medium heat and cook until sauce begins to boil slightly. Reduce heat to low and simmer for a few hours. Check occasionally and add water as necessary. 
  3. Remove from heat and let cool for a few minutes then blend sauce.
  4. After blended, place back in pot and warm again until ready to serve. Season to your liking and enjoy! We enjoyed the sauce on spaghetti squash, but it would also be good on pasta. :)
